Sebring is a very safe track. Tons of space for runoff everywhere.
I have over 100 track/race days logged at Sebring. You probably hear more incidents at Sebring just because it hosts (probably) 10x the track days compared to say Daytona.

I consider Daytona the most dangerous track in the south.
Barber and Roebling Road are very safe as long as the grass is dry.
I also consider Road ATL 2nd most dangerous.
I've seen more serious carnage at Road ATL than anywhere else. (Mainly because everyone seems extra careful at Daytona because it has a reputation for high speed tire failures)

Robling and ATL can be really really really cold in Dec + Jan. I've had ice conditions at both tracks in November. I pretty much write off everything not in FL from early DEC until March.
Then write off FL from June until October (due to rain)
