For the 19 all around setup with 305/30 and a ET 29 might rub unless you can dial in more camber, then I'd probably run 265/35/19 and 305/30/19 in that setup if possible or 255/35/19 and 295/35/19. Keep in mind the 305 tire will be bulgy on a 10.5 inch rim, and with that offset I'm actually certain it'll rub on normal camber specs.
It's true that the 255/35/19 will look stretched on a 10 inch wheel if you use the OEM tire. The RE71R and RE11 are pretty bulky though. There might be a slight stretch, but not as much as with the OEM PSS. The reasoning behind this combination was to try to keep the sidewall heights similar. But it might just be more prudent to go with a 19x9.5 and 20x11 or 19x9.5 and 20x10.5 instead of the 19x10 and 20x11.

I definitely don't want to go the 275/30/19 route as I don't want to fall below the 26" total diameter mark.

As far as the 305/30/19 fitting on a 10.5 ET29, it shouldn't be a problem. The F80 as a few more MM in width compared to the F82 (which is probably what you're measuring by). I'm also at -2.2 degrees of camber.

If you check out dubsesd 's F80, he's running a 20x11.5 ET37 rear with 305/25/20 with -0.6 degrees of camber. His set up pokes 5mm more than the 10.5 ET29. I also roughly measured my current 19x11 ET40 + 305/30/19 wheel/tire combo, and I definitely have room for 5 more mm of poke.
