A couple of thoughts on the M3 (I have no experience with the M5):
My AC works fine. I do have to put the fan on a little higher than my prior car, but when I do it cools down very quickly and then I can keep the fan at a lower setting to maintain.
On the exhaust note, I came from an Audi S4, which was very quiet. I was surprised at how loud the M3 is, since its a six. But I mean that in a good way. Its something that I look forward to each time I get in it. If you keep in comfort mode, it keeps the rpms down and it is noticeably quieter going around town (which is one of the reasons I don't use that mode).
