You don't need to wring it out on a track to know it allows the car to be much more planted and handle upsets much, much better. And this is true for non-CP and CP cars alike. I've driven both before and after.

For flat tracks like Road America I fully believe this! But also for more bumpy tracks like Nürburgring Nordschleife or B-/C-roads? I mean ... the missing spring travel could lead to less traction?

Define, "older" but, yes!

Just had it done! I'm not that "in tune" with my car yet but, at least, I do feel that
the steering is a lot tighter/precise.

As far as getting it done, it "should be" free but, it's not. Cite the alignment issue.
(see Service Bulletin - "SIB 32 01 17") and it will get done for no charge.

Maybe for springs that weren't matched to the struts, but so far these have done nothing except improve the handling of the car.

Now, I also have them set to the BMW recommended height. If you go lower than that, I'm sure you will lose some of the advantages of the setup.
