I double checked the connections, everything was in.
The Hero 8 has the single USB-C port, so I used this adapter, which the mic gets plugged into:

Are you saying I need this additional adapter? I.e.:
Purple panda > TRS adapter > GoPro USBC adapter > GoPro
EDIT: With searching a bit more, it looks like I do need that additional adapter in between -- d'oh!
