I know what you mean. The paddles are handy, but if I want to go to neutral or switch into D mode to auto-stop the engine at a long light or shift in a tight turn I have to use the stick anyway so I still go back and forth... and it helps maintain "muscle memory" of shifting for when I go back to any of our other cars.
What really mixes up my hands is shifting with paddles close to when I need to use the signal or wiper stalks. Mostly the results are benign but I have accidentally grabbed a big handful of downshift on more than one occasion!
