Do they dry age?
Steak eating, for me, is done one of two ways -- Argentinian style places with flank/hanger/skirt, or dry aged black and blue Kansas City strip (NY strip, porterhouse or ribeye acceptable substitute).
Filet is for the uninitiated masses.
