Why are the rears so wide in most of these setups?
It's not making room for proper tire setups.
A proper tire setup should have the overall diameter of the rear larger than the overall diameter of the front.
So in 19s I honestly cant think of anything better than 255/35 Front, 275/35 rear (which is stock) Other than 265/35 Front and 285/35 Rear.

In 20s
265/30 Front and 285/30 rear work best. If you want to go to 265/35 Front and 295/30 rear thats good too, but any wider in the rear while keeping the 265 front I'm sure is upsetting whatever balance the M engineers achieved.

There isn't necessarily a benefit to putting a 305 in the rear other than the fact that it looks good. Traction isn't the biggest reason (contact patch, load range, physics, etc) so it really comes down to aesthetics (most of the time).

Now, on a track setup, running 285/305's on a proper tire would surely show some value on track.

Here's a good example of a 19 inch approach with a proper track setup. Still pretty close on balance I think.

- 19" HRE R101 Wheels in Brushed Finish
- 265/30/19 & 295/30/19 Toyo R888 Tires

Finished up the set on my M3. Definitely love how these came out on the car. Just the right amount of pop.

HRE S200 in Satin Bronze with Polished Lip.

I think it's worthy to note that the Satin Bronze finish is quite subtle until the sun hits it just right. Then the whole wheel comes alive, which is one of my favorite parts of it.
