I worked with him this morning and we got my iDrive updated to the latest version and full screen Apple CarPlay enabled remotely. He was a pleasure to working with and really knows his stuff. Is it possible to get Carplay with just Spotify and Waze and not the other apps like phone, iMessage, etc, installed?

You can just use whichever apps you want to use. You're not forced to use the ones that you don't need.
