This is what I use but AR is not that good IMO. It has some issues when pressure motor is cold.

Also the soap makes different of the thickness of the foam.

Would you recommend that specific foam cannon? I notice that MTM offers other foam cannons - some of which that are a bit more spendy

The one I use MTM foam cannon is very good. I don't know about others

Nice thing, bro. I think that pressure washers are our future, because the water jet allows to get rid of tiny particles of dirt without touching the car body. So no abrasive effect will ever cause any damage to it. I read about SPX 3000 and think that this washer is a good combo of price and quality. I don't trust people at the station and want to wash my car myself. Sometimes I think they are a bit lazy and skip parts that are hard to access.

Pressure usually doesn't matter unless your going higher then 2000psi. In any case the rate for any pressure washer is determined using the included attachment nozzle. My recommendation is that you purchase a 40 (white) degree tip. This is best for two reasons it increases gpm which is great for washing cars being gentle on the paint and it lowers the pressure. I only use a nozzle tip under 40 degrees for wheels, exhaust and undercarriage. I hope this helps best of luck!

It's more about flow than pressure. You want the most flow you can get while maintaining around 1000 psi. That is still enough pressure to damage the paint if you get ridiculously close... Find a decent brand (I personally have a Karcher unit), reference the sheet below to find which nozzle size you need for max flow (just scroll down to the bottom of the page), buy that size and enjoy.
