I have the electronic steering wheel that can show both oil and coolant temp. When in efficient the oil and coolant will be between 217-223F. Once you go into sport+ the coolant will drop to around 172F, in less than a minute. The oil temp will also drop, but at a slower pace, eventually settling in the 203-205F range if you aren't pushing the car. If you're driving it a bit harder the oil temp will usually be between 212f to 225f even in Sport+. I'm assuming with hard track use, the temps might be a bit higher.

I'm not sure if break-in period has an affect on oil and coolant temp targets. But I'm pretty certain other external factors change how the car deals with temperature targets. For instance, I noticed that on hot days (over 95F ambient), the car, even if kept in efficient mode, usually won't let the coolant temp go over 200F. It'll also keep the oil a bit cooler than usual also.

My feel with oil temperature is that you want to boil the water moisture out of the oil. So above 212F is good at times.
