So what do people do after a hard track session when they want to let the engine idle to cool down, but also don't want to apply the parking brake with scolding hot rotors? Are people just using wheel chocks?

I only really worry about having to hand the car over to a valet. Trouble being the one you hand your keys to often won't the the one parking it. Its likely they'll put in in N and forget the parking brake, which can let it roll or leave it in N and use the brake in which case the car still won't lock. Its a minor inconvience for the owner, but risky for anyone who has to move the car and isn't familiar with it.
